I love a good meatball... but I'm also lazy, and don't make them often. I gave these a try because they are baked meatballs, and I can't fry a meatball to save my life! Give these a try, but don't overbake them, or they'll be dry.
Ingredients List:
2 tablespoons Olive Oil
1 large Onion (finely chopped)
2 cloves Garlic (minced)
1 teaspoon Salt
1/2 teaspoon Black Pepper
1 bag of fresh Spinach
2 tablespoons Worcestershire Sauce
1/3 cup Chicken Broth
1 pound Ground Turkey Sausage
3/4 cup Bread Crumbs
2 large Eggs
Preheat oven to 400°.
Prepare a large baking sheet by spraying it with cooking spray.
In a frying pan over medium heat, heat the Olive Oil.
Add Onion, Garlic, Salt, and Pepper.
Sauté till Onion is translucent.
Add Spinach to the pan.
Stir to combine with Onion mixture and wilt Spinach.
Add Worcestershire Sauce and Chicken Broth.
Mix well to combine.
Cook till most of the liquid has evaporated.
Set aside to cool.
When the Vegetable mixture is cool, dump it into a large bowl.
Add Turkey, Bread Crumbs, and Eggs.
Mix lightly.
Using an ice cream scoop of the desired size, create meatballs by rolling a scoop of the meat mixture between your hands till a ball has formed.
Place on the prepared baking sheet.
Bake for about 20 minutes or until your meatballs have an internal temperature of 160°.
