Berries and Cream Cupcakes

I made these for my Grandfather's birthday. Grandma appreciated that they were so pretty and had fresh fruit on them... Grandpa appreciated that they were yummy cupcakes.


Ingredients List:

Vanilla Cupcakes

1 1/4 cups All Purpose Flour

1 cup Sugar

1 1/2 teaspoons Baking Powder

1/2 teaspoon Salt

1/2 cup Milk

1/4 cup Vegetable Oil

1 teaspoon Vanilla Extract

1 large Egg

1/2 cup Water


Berry Frosting

1 cup Freeze-Dried Mixed Berries

1 cup Unsalted Butter

4 cups Powdered Sugar

3-4 tablespoons Water or Milk


Fresh Fruit for garnish such as Strawberries, Raspberries and Blueberries.


  1. Sift together Flour, Sugar, Baking Powder, and Salt.

  2. Set aside.

  3. In a large bowl, mix Milk, Oil, Vanilla Extract, Egg and Water.

  4. Slowly add dry ingredients till just wet.

  5. Fill baking cups 2/3 full and bake at 350° for 15-17 minutes.

  6. Cool completely before frosting.


  1. For frosting, combine all ingredients till desired consistency is reached.

  2. Frost cupcakes when they're completely cool.

  3. Top with fresh fruit.
