I LOVE, LOVE, LOVE enchiladas. So, why not have them for breakfast too??
Ingredients List:
1 tablespoon Olive Oil
1 clove Garlic (minced)
1/2 Yellow Onion (minced)
1 lb Sweet or Hot Italian Sausage
1 16oz can Diced Tomatoes
1/2 each Red, Yellow, and Orange Bell Pepper
1 2.25oz can Diced Green Chilies
1 16oz can Green Enchilada Sauce
10x Eggs
10x Flour Tortillas
2 cups Cheese (shredded)
Preheat oven to 350°.
Heat oil in a large skillet over medium heat until hot.
Add Garlic and Onion and cook until translucent.
Cut Sausages in 1/2 lengthwise, then into 1/2 coins.
Add to skillet and cook just till they begin to brown, 3-4 minutes.
Add Tomatoes, Bell Peppers, and Salt & Pepper.
Cook till Bell Peppers start to soften.
Crack 10 eggs into a separate bowl and stir till mixed.
Season with Salt & Pepper.
Add Eggs to Sausage and Peppers mix.
Scramble till eggs are fluffy.
Remove from heat.
Spray a 9x13 baking dish with Cooking Spray.
Fill Tortillas with Egg, Sausage & Pepper mixture.
Top with Cheese
Roll Tortillas and place in baking dish.
Once the baking dish is full of stuffed, rolled tortillas, top it with Green Enchilada Sauce.
Top with remaining Cheese.
Bake for 30 minutes at 350°.
Serve topped with Salsa and Sour Cream if desired.
