If you're anything like me, and way too busy to make cabbage rolls, but love the flavor, here's a great alternative that's also a great weeknight meal to warm the entire family.
Ingredients List
2 teaspoons Olive Oil
1 pound lean ground meat (I used Turkey)
Salt & Pepper
1 medium Onion (finely diced)
2 cloves Garlic (minced)
4 cups Green Cabbage (chopped)
2 medium Carrots (peeled and sliced)
4 cups Broth (match this to your meat choice)
3 8oz cans of Tomato Sauce
1/2 cup White Rice (uncooked)
1 Bay Leaf
2 tablespoons fresh parsley (chopped)
In a Dutch oven or large soup pot, heat oil over medium-high heat and add ground meat.
Season meat with Salt & Pepper.
Cook until browned.
Add diced Onions and minced Garlic.
Cook for another 2-3 minutes, until Onions are tender.
Add in chopped Cabbage, Carrots, Tomato Sauce, Broth, Rice, and Bay Leaf.
Stir to combine.
Bring soup to a simmer.
Let Cook for about 25 minutes, until rice is tender.
Take out the Bay Leaf.
Sprinkle with chopped parsley (optional).
