Cabbage Soup

This simple throw-it-together soup is great for those cold weeknights when you don't really feel like cooking.


Ingredients List:

2 teaspoons Olive Oil

1 medium Onion (diced)

3 stalks Celery (diced)

3 Carrots (diced)

8 cups Vegetable Broth

1 small head Cabbage (chopped)

1 15oz can Diced Tomatoes (drained)

Salt and Pepper to taste


  1. In a large soup pot, heat Olive Oil.

  2. Add Onion, Celery and Carrots.

  3. Saute till Onions are translucent.

  4. Add Vegetable Broth.

  5. Bring to a boil.

  6. Boil for 10 minutes, till Celery and Carrots are soft.

  7. Add chopped Cabbage.

  8. Boil another 10 minutes till Cabbage is softened.

  9. Remove from heat.

  10. Add Diced Tomatoes.

  11. Season with Salt and Pepper to taste.

  12. Allow to sit for a few minutes, to cool slightly, and to warm tomatoes through.
