I LOVE a good sweet and sour chicken, and this recipe is quick and simple for those long weekdays when the last thing you want to do is spend hours in the kitchen feeding your family.
Ingredients List:
2 tablespoons Olive Oil
2 pounds boneless/skinless chicken thighs or breasts (diced)
2 Green Peppers (diced into 1" squares)
1 Large Onion (diced to 1" squares)
1 20oz can Pineapple Chunks in juice (drain and reserve juice)
1 12oz jar Kikkoman Sweet and Sour Sauce
Rice
Cook rice according to package directions.
Heat Olive Oil in a large skillet over medium heat.
Cook diced Chicken till browned slightly and cooked mostly through.
Add Green Peppers and Onions.
Stir.
Cook till Onions start to turn translucent, about 5 minutes.
Add drained Pineapple Chunks.
Add Sweet & Sour Sauce.
Stir.
Fill Sweet and Sour Sauce jar 1/2 - 2/3 full with reserved pineapple juice. Recap and shake.
Add this liquid to the skillet.
Cook till Chicken is cooked through, Pineapple is warm, and Peppers and Onions are soft.
Serve over rice.
Note: The particular brand of Sweet and Sour Sauce mentioned above is NOT GF. You can sub out for a GF variety if needed.
