This cookie will bring a special sparkle to your holiday. Personally, I don't care for eggnog, but The Man loves it; almost more than he loves me. So, when I offered to make him Eggnog Cookies, he was torn between wanting to try Eggnog Cookies, and me using his eggnog to make cookies. In the end, I think these won him over.
Ingredients List:
2 1/4 cups All-Purpose Flour (or GF 1-to-1 Baking Mix)
1 teaspoon Baking Powder
1/2 teaspoon Ground Cinnamon
1/2 teaspoon Ground Nutmeg
1 1/4 cups Sugar
3/4 cup butter (room temperature)
3/4 cup Eggnog (increase to 1 cup if using GF Baking Mix)
1 teaspoon pure Vanilla Extract
2 large Egg Yolks
Preheat oven to 325 degrees.
In a small bowl, whisk together the dry ingredients.
In a large bowl, use an electric mixer to combine sugar and butter.
Add the remaining ingredients and beat at medium speed till smooth.
Mix the dry ingredients and beat at low speed till just blended.
Drop by teaspoonfuls onto an ungreased baking sheet.
Bake for 15 minutes, or until the bottoms turn light brown.
Transfer to wire racks to cool.
