Chicken Enchiladas are seriously my weakness. I will try any recipe I find and this one, honestly was the simplest recipe I've come across EVER. I will say though, this recipe has zero spice whatsoever, so if you like it hot... maybe amend the sauce.
Ingredients List:
8 flour tortillas (or GF Tortillas)
1/4 cup shredded Cheddar Cheese
For Filling
2 cups cut-up cooked Chicken
1/4 cup sliced Olives
1/4 cup diced Onion
1/4 cup shredded Cheddar Cheese
1 4oz can Green Chilis
1 14oz can Diced Tomatoes
1/2 15oz can Corn
For Sauce
1 clove minced Garlic
2 8oz cans Tomato Sauce
1/2 cup Water
1 teaspoon Chili Powder
Preheat oven to 350 degrees
Mix all filling ingredients in a large bowl. Set aside.
Coon and stir garlic in olive oil.
Stir in tomato sauce, water, and chili powder.
Heat through.
Spoon 2 rounded tablespoons full of chicken mixture onto the center of each tortilla.
Roll up.
Place seam side down in a square 9x9 pan.
Pour hot tomato sauce over tortillas.
Sprinkle with Cheese
Bake 15-20 minutes or until heated through.
