Italian Sausage and Ravioli Soup

We had a crazy cold snap where I live, so even though it's not raining, I made soup anyway. I paired it with garlic knots to soothe The Man, and even he said it had good flavor... even though it was soup.


Ingredients List

1 pound bulk Italian Sausage

1 tablespoon Olive Oil

1 cup Onion (chopped)

2-3 Garlic Cloves (minced)

8 cups Beef Broth

14.5 oz can Diced Tomatoes (do not drain)

8 oz can Tomato Sauce

3 carrots (diced)

2 small Zucchini (diced)

1 green Bell Pepper (diced)

2 large handfuls of fresh Spinach

1 teaspoon dry Italian Seasoning

1 teaspoon Salt

1 teaspoon Pepper

18-20 oz fresh Ravioli (flavor of your choice)


  1. Brown Sausage in a large pot.

  2. Add Broth, Onions, Garlic, Tomatoes, Carrots, Tomato Sauce, Zucchini, Bell Pepper, Italian Seasoning, Salt & Pepper.

  3. Stir.

  4. Bring to a boil, then reduce to a simmer for 30 minutes.

  5. Stir in Ravioli.

  6. Cook according to package directions.

  7. Stir in spinach and cook till just wilted.

  8. Turn off the heat and ladle into bowls.
