Holy Buckets you guys; where has Orzo been all my life? And why haven't I tried it before now? This soup was so yummy, even The Man liked it. Too bad I ate ALL the leftovers!
Ingredient List:
1 Cup Carrots
1 Cup Celery
3 Cloves Garlic (minced)
4 Cups Spinach (loosely packed)
1 (14 oz) Can Fire Roasted Tomatoes
1/2 (10 oz) Bag of Baby Pearl Onions (or 1 Small Onion diced)
8 Cups Chicken or Vegetable Broth
1 1/2 Cups Orzo Pasta
2 teaspoons Italian Seasoning
1 Pound Ground Turkey
Salt and Pepper
In large pot, bring broth to boil.
Meanwhile, in skillet, brown the ground turkey.
Add carrots, celery, garlic, tomatoes, onion, and Italian seasoning to the boiling pot. Cook 5-6 minutes.
Add the Orzo, cook 7-8 minutes, according to package directions.
Remove from heat, add browned ground turkey and spinach. Stir well until spinach wilts.
