Kitchen Sink Soup

Writer's picture: LuanneLuanne

The great thing about soup is, you can add anything want. Bring some broth to boil and add whatever the heck your little taste buds desire. That's exactly what I did with this Kitchen Sink Soup. Used up a bunch of stuff sitting around in the fridge and the veggie bowl. Even The Man who as you all know isn't the biggest fan of soup likes it.

Ingredients List:

1 tablespoon Olive Oil

2x Tube Sausages (cut into coins)

8 cups Broth (any flavor)

1/2 cup Turnips (chopped)

1 small Zucchini (diced into 1/4 moons)

1 Sweet Bell Pepper (chopped)

1 1/2 cups Carrots (diced)

3 stalks Celery (chopped)

8oz Whole Mushrooms (quartered)

2x ??oz cans Spinach (drained)

1 28oz can Whole Tomatoes (crushed by hand)

1 15oz can White Beans (do NOT drain or rinse)

  1. Heat Olive Oil in a large stockpot.

  2. Brown Sausage to the desired done-ness.

  3. Add Broth.

  4. Bring to Boil.

  5. Add hard vegetables that take longer to cook. Turnips, Zucchini, Bell Peppers, Carrots, Celery.

  6. Boil till vegetables are soft. About 10-15 minutes.

  7. Add softer vegetables, Mushrooms, Spinach, Tomatoes, and Beans.

  8. Heat through.

  9. Serve with your favorite bread.
