Meatballs and Polenta

This recipe is loosely based on a Michael Simon recipe. But, as I am on occasion SUPER lazy in the kitchen, I made it as easy as possible...


Ingredient List:

Polenta - family size portion including ingredients from package directions

Bag of Frozen Meatballs (again, however many you need to feed your family)

32 oz jar of your favorite Marinara Sauce

Canned Greens (Optional... we tried them once and decided we didn't like them this way)

Mozzarella Cheese


  1. Bake Meatballs according to package directions.

  2. Make Polenta according to package directions.

  3. Heat Marinara Sauce.

  4. Heat Canned Greens (optional).

  5. Layer, Polenta, then optional Greens, then meatballs, then sauce, then cheese.

  6. Enjoy.
