This recipe is so reminiscent of a dish my Grandmother made when I was a kid. I felt so nostalgic when I was eating it. Plus, it's great for cold, rainy night dinners.
Ingredient List:
Meatballs:
2 lbs Ground Meat (turkey, beef, chicken, or combo)
1/2 Cup Cracker Crumbs
1/2 Cup Clery (Chopped)
1/4 Cup Onion (Chopped)
1 Lg Egg
Salt, Pepper, Garlic Powder
Gravy:
2 (10.5 oz) Cans Cream of Celery soup
1 (10.75 oz) Can Cream of Chicken soup
1 packet Onion Soup Mix
1 1/2 Cups Chicken Broth (or water)
Preheat oven to 350 degrees.
In a medium bowl, mix together the meat, crumbs, celery, onion, egg, salt, pepper, and garlic powder.
Roll into 2" balls, and place immediately into a 9x13 baking dish.
Meanwhile, in a medium pot, mix together the soups, packet of onion soup mix, and broth.
Heat on the stove till it starts to soft boil.
Remove from heat.
Pour gravy over meatballs.
Cover pan with foil, bake for 45 minutes.
Remove foil, bake for an additional 30 minutes.
Serve immediately over pasta, mashed potatoes, or rice.
