Minestrone Soup

The Man is not a big fan of soup, but for some reason, he LOVES this Minestrone. Try it out, it's a quick cook, so it's even good for a weeknight, and, since it's all veg, it's a great Meatless Monday.


Ingredient List:

10 oz bag Baby Spinach

1/2 medium Red Onion (finely chopped)

8 cups Vegetable Broth

2 (14.5 oz) cans Diced Tomatoes (Fire Roasted preferably)

1 (15 oz) can Kidney Beans (rinsed and drained)

1 medium Zucchini (halved and cut into 1/4" dices)

1 medium Red or Yellow Bell Pepper (finely chopped)

1 medium Carrot (finely chopped)

2 Garlic cloves (minced)

1 1/2 cups uncooked Ditalini (or GF pasta of your choice)

1/4 cup prepared Pesto


  1. Bring broth to boil in large soup pot.

  2. Add Onion, Carrot, Beans, & Garlic.

  3. Boil 5 minutes.

  4. Add Zucchini, Peppers, Tomatoes & Pasta.

  5. Boil 10 minutes.

  6. Remove from heat.

  7. Add Pesto. Stir.

  8. Add spinach, allow to wilt, stir.

  9. Season to taste with salt and pepper.

  10. Serve
