Comforting Parmesan noodles with fresh broccoli and mushrooms. Easy, quick, healthy, and satisfying.
Ingredients List:
Olive Oil
16oz Mushrooms (sliced)
1 Onion (diced)
2 cups Broccoli Florets
16oz Long Pasta (your choice)
Heaping 1/2 cup Parmesan Cheese
Season Salt (to taste)
Garlic Powder (to taste)
Bring a large pot of water to a boil.
Add Broccoli and boil till crisp-tender, 2-3 minutes.
Scoop out florets, drain, and set aside.
Bring water back to boil and add Pasta.
Cook pasta till Al dente.
Scoop out a cup of pasta water then drain pasta.
Meanwhile, heat a large skillet over medium-high heat.
Add Olive Oil.
Sauté Onions and Mushrooms till soft.
Add Broccoli.
Add Season Salt and Garlic Powder.
Stir to combine.
Add drained Pasta.
Stir to combine.
Add Parmesan Cheese.
Add reserved pasta water.
Stir thoroughly to combine.
Serve immediately.
