Quick Breakfast Burrito

I love a good breakfast burrito. But since I have dietary issues with most breakfast meats, it's hard to find pre-made breakfast burritos that I can actually eat, so... I just make my own. Here's one of my favorite versions.


Ingredient List:

1 tablespoon olive oil

1/2 - 1 cup diced, and/or chopped Vegetables of your choice (In this case, I was using Red Onion, Mini Bell Peppers, and a leftover baked potato, but you can use anything you like... and have on hand.)

2 cups Spinach

6 eggs (beaten)

Salt and Pepper to taste

Brown and Serve Sausages (2 per burrito, I used Turkey)

Shredded Cheese of your choice

Tortillas (1 per burrito)

Salsa (optional)


  1. Brown sausage on medium-low heat in a shallow frying pan.

  2. In a separate frying pan, heat Olive Oil.

  3. Saute veggies to the desired doneness. (I like a little chew left in my veggies).

  4. Add Spinach and wilt with other vegetables.

  5. Pour eggs into the pan with veg, and scramble everything together.

  6. When eggs are cooked to desired consistency, remove them from heat.

  7. Put two sausages in a row, slightly off the middle of your tortilla shell.

  8. Sprinkle with cheese.

  9. Add Veg/Egg mixture to top.

  10. Add salsa (optional.

  11. Fold up the sides, and roll the tortilla around filling to form a burrito.
