Reuben Stromboli

My stromboli turned into more of a calzone tube, but it was still mighty tasty! I used my home-canned Corned Beef and let's just say, this meal disappeared FAST!


Ingredients List:

11oz can Refrigerated Pizza Dough

1/2 cup Thousand Island (or Russian) dressing

1 pound Corned Beef (thinly sliced) (or in my case, a 32oz jar of Corned Beef chunks)

6 oz Gruyere cheese (shredded)

16oz jar Sauerkraut (thoroughly drained)

Olive Oil (optional)

Caraway Seeds (optional)


  1. Preheat the oven to 400 degrees.

  2. Line a baking sheet with parchment paper.

  3. Open the can of pizza dough and stretch it thin and even on the parchment.

  4. Spread the dressing on the dough, leaving a 1-inch border around the edge.

  5. Top with Corned Beef.

  6. Top with Cheese.

  7. Top with well-drained Sauerkraut.

  8. Starting at one long side, carefully roll up the dough like a jelly roll.

  9. Place roll in the middle of the baking sheet, seem side down.

  10. Tuck ends under stromboli.

  11. Cut several diagonal slits into the crust.

  12. Rub with Olive Oil (optional).

  13. Sprinkle with Caraway Seeds (optional)

  14. Bake for 15-20 minutes or until deep golden brown.

  15. Serve warm with extra dressing for dipping if desired.
