These sheet pan fajitas are so simple. And who knew that cauliflower was such a great vehicle for tacos??
Ingredients List:
1 medium-head Cauliflower
2 Bell Peppers (any color)
1 Sweet Onion
1 (14oz) can Black Beans (drained and rinsed)
Cilantro (for garnish)
Tortillas
Olive Oil
2 envelopes of Taco Seasoning
Preheat oven to 425 degrees.
Chop cauliflower into bite-size pieces.
Place in a large bowl.
Sprinkle with Olive Oil and 1 envelope of Taco Seasoning.
Mix thoroughly to cover.
Put on baking sheet.
Slice onion and bell peppers.
Add to a large bowl.
Sprinkle with Olive Oil and the remaining envelope of Taco Seasoning.
Mix thoroughly to cover.
Put on the second baking sheet.
Bake in preheated oven for 20 minutes.
Remove from oven.
Stir contents.
Add black beans to one of the sheet pans,
Bake both sheets for an additional 10 minutes.
Remove from oven.
Layer fajitas with seasoned cauliflower, beans, peppers and onions, cheese, cilantro, and any additional toppings as desired.
