The Rotisserie Chickens available where I live are small and prohibitively expensive for what they are. So, I tried this...
Ingredients List:
2 Chicken Hindquarters (Leg & Thigh)
Cooking Spray
1 teaspoon Salt
1 teaspoon Ground Pepper
1 teaspoon Paprika
1 teaspoon Garlic Powder
1 teaspoon Dried Oregano
Preheat oven to 425°.
Grease an 8"x8" baking pan with cooking spray.
Pat Chicken dry with a paper towel.
Arrange pieces in the baking dish.
Combine Salt, Pepper, Paprika, Garlic Powder, and Oregano in a small bowl.
Rub the spice mix onto the Chicken.
Roast in the preheated oven until Chicken is browned and juices run clear, about 45 minutes to 1 hour, or until internal temperature reads 165°.
