Sausage and Pepper Burritos

Sausage and Peppers is traditionally served on a sandwich roll, such as a hoagie, but as a diabetic, I try to avoid too much white bread. So, I experimented with making a traditional sausage and peppers and wrapping it in a tortilla shell. This simple one skillet dinner turned out pretty darn good.


Ingredients List: 1 Tablespoon Olive Oil 1 lb (or 1 package) of Italian Sausage Link 2 Bell Peppers (Color of your choice - I used green and orange) 1 Lg or 2 Sm Yellow Onions 1 teaspoon Salt 1 teaspoon Black Pepper 1 tablespoon Italian Seasoning 4 cloves Garlic 1 (15oz) can Diced Tomatoes

  1. Brown sausages in heated skillet.

  2. Remove sausages to a plate.

  3. Add Olive Oil to skillet.

  4. Once heated, add sliced onions and peppers.

  5. Add salt, pepper, Italian Seasoning and garlic.

  6. Cook 10 minutes till onions & peppers begin to soften.

  7. Add canned tomatoes to skillet, stir and cook 5 more minutes till tomatoes are heated through

  8. Add sausages back to skillet. Nestle the sausages into the veggies and sauce, and cook for another 5 minutes, just to reheat the sausages.

  9. Pile sausage and peppers onto a tortilla with a sausage nestled on top. Wrap tortilla burrito style.


You can add any toppings you like to the burrito. Cheese, sour cream, salsa, etc. Personally, I put sour cream on mine... The Man added some Red Pepper Flakes.

Do you think these would freeze well? Always looking for possible 'make-ahead-and-freeze' grab & go meals. -AJ

I find that bell peppers don't freeze well. They have too much water content, and when thawed become rather mushy. But it's sort of a "to each their own" thing.
