This recipe was born from one of those nights when I had Ground Turkey to use and no desire to cook. So I threw some stuff at a frying pan till I had some semblance of a meal, and this Skinny Turkey Taco Salad was born.
Ingredients List:
1 lb Ground Turkey
15oz can Black Beans (rinsed and drained)
15.25 oz can of Corn
4 oz can Green Chilis
2.25 oz can Sliced Black Olives
1/4 cup Taco Seasoning
Lettuce
Fritos
Shredded Cheese
Salsa
Sour Cream
Brown Ground Turkey in a skillet.
Add Beans, Corn, Green Chilis, and Black Olives.
Add Taco Seasoning and stir to combine.
Serve Turkey and Vegetable mixture on a bed of lettuce.
Top with Fritos, Cheese, Salsa, and Sour Cream.
