If you're as buried in zucchini as I am, you're looking for any recipe possible to make something yummy with it. So, here's a quick yummy recipe idea to use up a couple of your abundance.
Ingredients: 2 Zucchini 1 lb Hamburger 1 15oz can Tomato Sauce 1 envelope Sloppy Joe seasoning Cheese of your choice (I like Mozzarella) Salt and Pepper
Preheat oven to 425 degrees.
Slice zucchini in half, lengthwise, and scoop out the seed part of the zucchini to make a hollow.
Place hollowed-out zucchini face up on a baking sheet.
Sprinkle with salt and black pepper. (The Man said his needed more pepper than mine, so do this to taste.)
Bake for 10 minutes until they are just beginning to get soft.
While zucchini is baking, brown the hamburger.
Once burger is browned, add tomato sauce.
Stir in Sloppy Joe seasoning and allow flavors to mix till zucchini is ready.
Spoon Sloppy Joe mix into zucchini boats, pile it high.
Sprinkle cheese on top.
Return to oven and bake for an additional 6-10 minutes till cheese is melted.
