I made this recipe LONG before Thanksgiving, so all the ingredients are listed out, but, I realized, this could very easily be done with all those leftovers you have clogging up your fridge...
Ingredient List:
For Stuffing
3 Tablespoons Butter
1/4 Med Red Onion
1 Med Sweet Onion
3 Celery Stalks
3/4 Cup Chopped Mushrooms
2 Tablespoons Poultry Seasoning
4 Cups Stuffing Cubes
2 Cups Chicken Broth
2 Eggs
For Gravy
2 Packages (.87oz) Chicken Gravy
1 Cup Water
1 Cup Chicken Broth
4 Cups Cooked Chicken
Add Stuffing Cubes to large bowl. Set aside.
In frying pan, melt Butter.
Saute Onions, and Celery till onions start to go translucent.
Add Mushrooms, cook till soft.
Season with Salt, Pepper, and Poultry Seasoning
Add skillet contents to bowl of stuffing cubes.
Add Chicken Broth.
Add Eggs.
Stir till thoroughly combined and stuffing has absorbed all the broth.
Pack stuffing mix into waffle maker, cook for approximately 4 minutes on Medium heat.
Meanwhile, make Chicken gravy according to package directions, substituting 1 of the cups of water for 1 cup of chicken broth. This just adds a little extra flavor.
When gravy is hot, add chicken pieces.
Stir till chicken is warmed through, and waffles are done.
Serve chicken gravy on top of waffles.
It's not the prettiest dish, I'll grant you that, but it was super tasty. Sort of a leftovers riff on Chipped Beef on Toast (or as it's more commonly known, Shit on a Shingle). For a little more history of Shit on a Shingle, check out Gastro Obscura's link.
