I LOVE Soup in the Fall. The Man... not so much. He jokes that I'm only allowed to make soup on days that it rains. Thank goodness we live in Oregon, right?!? But, out of respect for the love of my life, I try to only make soup once a week, whether it's raining or not. He seems to be accepting of this compromise. So, here's my Super Simple Chicken Noodle Soup recipe. Crazy easy, with just 6 ingredients, and one pot!
Ingredient List:
8 Cups Chicken Broth
4 Celery Stalks
4 Carrots
1 Medium Onion
2 Cups Homestyle Egg Noodles
4 Cups Cooked Chicken
In a large pot, bring broth to boil.
Add diced celery, carrots, onion, and egg noodles.
Cook according to noodle package directions. (Homestyle noodles take longer to cook, so it'll be plenty of time to soften your veg).
When done to your taste, remove from heat, add chicken and give it a good stir.
Allow to cool slightly (unless you like your soup the temperature of molten lava), then season to taste with salt and pepper.
Serve with your favorite bread product of choice, or alone.
