Just like a pizza, you can pretty much add whatever you want to these zucchini boats... they just might be a touch more healthy. And GF.
Ingredients List
Minimum 2 Zucchini (you'll want at least 1 zucchini per person
Olive Oil
Garlic Powder
Toppings of your choice (pepperoni, sauce, cheese, tomatoes, whatever...)
Slice the zucchini in half, lengthwise.
if needed, remove the seeds using a spoon.
Brush with Olive Oil and sprinkle with herb/seasoning of choice (The Man) likes his with Crushed Red Pepper
Top with sauce.
Top sauce with Tomatoes
Top Tomatoes w/ Mini Pepperoni
Top Pepperoni with Cheese
Bake at 375 degrees for 20-30 minutes until zucchini is soft, and cheese is melty and brown on the top.
