Tatchos

I hate it when I plan a certain meal, then can't go through with it for whatever reason. Now, what am I going to do with the meat I defrosted? Regroup! Enter... Tatchos.


Ingredients List:

Mini Tots (about 3/4 of a 28oz bag)

Salt & Pepper

1 pound Ground Meat (your favorite type)

1 15.5oz can Beans (your favorite)

1 4oz can Green Chilis

3/4 15.25oz can Corn (drained)

1 envelope Taco Seasoning

2 cups Shredded Cheese

1 4oz can Sliced Olives


  1. Layer Tots in a 9x13 baking dish in a single layer.

  2. Sprinkle with Salt and Pepper

  3. In a medium frying pan, brown Ground Meat till no longer pink.

  4. Drain and rinse Beans. Add to Ground Meat.

  5. Add Corn and Green Chilis.

  6. Add Taco Seasoning.

  7. Stir to combine and heat through.

  8. Once hot, layer on top of Tots.

  9. Spread evenly.

  10. Sprinkle with Cheese.

  11. Scatter Olives on top of the cheese.

  12. Cover pan with foil.

  13. Bake at 425° for 20 minutes.

  14. Remove foil and bake for another 10 minutes.

  15. Top with Salsa and Sour Cream if desired.
