Tortellini with Garden Vegetable Sauce

This quick fresh veggie and pasta dinner was so good, The Man and I both went back for seconds. You can also make this with mini ravioli if you prefer.


1 medium Onion (chopped)

1 stalk Celery (chopped)

2 cloves Garlic (minced)

1 tablespoon Butter

3 cups fresh Tomatoes (the juicier the better)

1 cup sliced Mushrooms

1/2 cup chopped Green Peppers

1/4 teaspoon Salt

1/8 teaspoon Pepper

1 small Zucchini (chopped)

20oz package of fresh refrigerated Tortellini

Parmesan Cheese (for garnish)


  1. For the sauce, in a large saucepan, melt Butter.

  2. Add Onion, Celery, and Garlic.

  3. Cook till tender.

  4. Stir in Tomato, Mushrooms, Green Pepper, Zucchini, Salt & Pepper.

  5. Simmer for 20 minutes.

  6. Meanwhile, cook Tortellini according to package directions.

  7. When Tortellini is cooked, add to sauce.

  8. Stir thoroughly.

  9. Serve garnished with Parmesan Cheese.
