Ya'll know about my love of Enchiladas, right?? Well, here's another version!
Ingredients List:
1 pound Ground Turkey
1 small Onion (diced)
1 Yellow Bell Pepper (diced)
1/2 Orange Bell Pepper (diced)
14.5oz can of Diced Tomato
2 2.5oz cans Black Olives (sliced)
1/4 cup Taco Seasoning
8 (8-inch) Flour Tortillas
1 1/2 cups Shredded Cheddar Cheese
10oz can Green Enchilada Sauce
10oz can Red Enchilada Sauce
Preheat oven to 350°.
Spray 9x13 baking dish with cooking spray.
Cook Turkey, Onion, Bell Peppers, Diced Tomato, and Black Olives in a large skillet over medium-high heat.
Cook till Turkey is no longer pink and vegetables are to desired softness.
In a separate bowl, mix Green and Red Enchilada Sauce.
Spread 1/4 cup of Christmas Sauce in the bottom of the baking dish.
Divide meat and vegetable mixture among tortillas.
Sprinkle each filled tortilla with 2 tablespoons of Cheese.
Once the pan is filled with rolled Tortillas, pour the remaining Christmas Sauce over all the Enchiladas.
Top with remaining Shredded Cheese.
Bake until sauce is bubbly and cheese is melted about 25 minutes.
Serve with salsa, sour cream, guacamole, or your favorite toppings.
