Veggie Lo Mein

I had to add more veggies and some tofu marinated in the yummy sauce, but it still turned out great!


Ingredients List:

Marinade/Sauce:

1/2 cup Vegetable Broth

6 tablespoons Soy Sauce

4 tablespoons Brown Sugar

2 tablespoons Sesame Oil


Lo Mein:

16oz Angel Hair pasta (cooked according to package directions)

2 large Carrots (julienne)

2 cups Broccoli (chopped)

1 large Red Bell Pepper (sliced)

1 medium Onion (sliced)

2 cups assorted Mushrooms (sliced)

1 cup Corn

16oz package Tofu

2 tablespoons Olive Oil


  1. In a bowl, combine Broth, Brown Sugar, Sesame Oil and Soy Sauce.

  2. Add cubed Tofu and marinate for 1 hour.

  3. Cook Pasta according to package directions.

  4. Add Olive Oil to a large preheated skillet.

  5. Fry carrots for 3 minutes.

  6. Add Broccoli and cook for another 3 minutes.

  7. Add Onion and Bell Pepper. Cook for another 3 minutes.

  8. Add Mushrooms and Corn. Cook for another 3 minutes.

  9. Add cooked Pasta to the skillet.

  10. Pour over Tofu and Marinade/Sauce.

  11. Mix all together. Serve immediately.
